Winter Green & Spinach Salad
 Here’s one of our favourite salads for a dinner side dish or hearty lunch. The stilton and bacon add a bit of indulgence without blowing that New Year’s healthy eating resolution.

75g Winter Salad mix
50g Oriental greens, roughly chopped
2 strips streaky bacon, chopped
20-25g stilton cheese, crumbled

1 part balsamic vinegar
2 parts extra virgin olive oil
½ - 1 dessert spoons Dijon mustard
1-2 dessert spoons lemon juice
1-2 dessert spoons mixed dry herbs (such as oregano, thyme, basil, marjoram)
¼ - ½ teaspoon salt/pepper

Combine dressing ingredients in a jam jar, seal and shake well (keep refrigerated if making ahead of time). Fry bacon till crisp, drain on kitchen towels. Add greens to large bowl and crumble stilton and bacon on top. Add dressing and toss well. Serve immediately. Serves 4.
