Salsa Verde Cruda (Fresh Green Tomatillo Sauce)
 A common table sauce found on the street foodstalls in Mexico, this salsa is tangy and delicious with a variety of foods (meats, seafood, and grilled vegetables).

227g tomatillos, husked and washed (about 5-6)
Fresh green chiles to taste, roughly chopped (remove seeds and membrane for a mild flavour)
5-6 sprigs fresh coriander, chopped
½ small onion, chopped
Salt to taste

Place tomatillos in a saucepan and cover with cold water. Bring to a boil and cook until barely tender (8-10 minutes); drain. Puree tomatillos in a blender or food processor. Add chiles, coriander, and onion and blend to a coarse puree. Pour sauce to a serving dish and thin with a bit of water and season with salt. Let stand for about ½ hour before serving, for the flavours to blend.

Variation: Raw Tomatillo Relish – Prepare sauce with chopped tomatillos, adding a bit of water before blending. Taste for salt; add more water if needed.
