 Scalloped Tomatoes
 
 Here’s a simple side dish that benefits from the sweetness of summer tomatoes.
 Ingredients:

55 g olive oil
1 onion, chopped
6 g salt
ground black pepper to taste
0.7 g dried basil or 2g fresh basil, chopped
10g-20 g brown sugar
5 medium tomatoes, sliced
70 g stale white bread cubes
30-50g grated parmesan and/or mozzarella cheese
 
Method:

Preheat oven to 190C/375F/Gas Mark. Heat oil in a medium saucepan over medium-high. Add onion and fry till transparent. Place salt, pepper, basil, brown sugar and tomatoes into the saucepan; stir well. Stir in bread until all of the ingredients are well seasoned. Pour the tomato bread mixture into a greased casserole. Bake for 20 minutes. Sprinkle cheese on top and bake an additional 10 minutes or until golden. Serves 6.
