Quiche Lorraine in the Garden
 A variation on a classic, this recipe cuts some of the fat and adds some healthy greens to make one delicious quiche!

80-100g short pastry
4 strips streaky bacon
1 slice emmental cheese (about 20g)
15g flat leaf parsley, chopped
70g fresh spinach, rocket or a combination, chopped
1-2 garlic, finely chopped
3 eggs
200ml milk
salt/pepper to taste
45g mature cheddar, grated

Preheat oven to 190C/Gas Mark 5. Line a 7-8 inch flan or pie dish with pastry. Fry bacon till desired crispiness, allow to cool, then chop. Place emmental slice in the pastry case and cover with bacon. Mix together chopped greens and garlic and spread over bacon. Whisk together eggs, milk, salt and pepper and pour over greens. Sprinkle with cheddar. Bake for 40 minutes or until golden brown and set. Allow to cool slightly before serving.
