Salad Of Goats Cheese With Rocket And Honey
 I’d admit I stole this one from Rachel Allen, but it sounded so nice I had to share. I imagine rocket and all the Spring Salad Gwanwyn leaves will work perfectly in this recipe. Serves 4.

4 handfuls Rocket leaves
200 g Soft Goat's Cheese
1 tablespoon good Honey
freshly cracked pepper and sea salt maldon if possible.
1 drizzle Olive Oil
1 wedge Lemon

Divide rocket leaves between 4 plates,or 1 large serving plate. Break up the goats cheese into rough 2cm pieces and scatter on top of the leaves. Drizzle each plate with 1 tsp honey and a squeeze of lemon juice. Season with salt and pepper and finish with a drizzle of olive oil. Serve straight away!
