Lemon Yogurt Dressing
 Here’s an easy dressing that works perfectly with the Winter Salad greens. Try adding other yeg, such as broccoli, avocado, and carrots, olives and legumes like schick peas for a light main meal.

235ml plain yogurt
60ml sunflower oil
60ml fresh lemon juice
10-15g chopped flat leaf parsley
1 garlic clove, finely chopped
sea salt/black pepper to taste.

Whisk together all ingredients in a small bowl. Adjust seasoning, if necessary. Serve immediately over salad, toss well.
