Minted Tomato Salsa
 Refreshing and tasty, this salsa can be made ahead and refrigerated for up to one week. Serve with grilled fish. Makes 4 cups.

650g chopped tomato
40g finely chopped red onion
5g chopped fresh mint
3g chopped fresh basil
10g finely chopped, seeded jalapeno pepper
15ml lemon juice

Combine all ingredients in a bowl.
