 Baked tomatoes oregano
 
 Here’s an easy afternoon snack or lovely side dish that will keep them coming back for more.
 Ingredients:

250-400g tomatoes, thickly sliced
20-30g grated parmesan cheese
15-20g fresh bread crumbs
2-3 clove garlic, minced
2 sprigs fresh oregano, chopped, or dried
salt and pepper to taste
15 ml olive oil
20g grated mozzarella (optional)
 
Method:

Preheat oven to 200 degrees C. Grease a shallow baking dish, approx. 8x8 inches. Place tomato slices close together, or overlapping, in baking dish. Combine all ingredients (except oil) in a small bowl. Sprinkle evenly over tomato slices. Drizzle with olive oil. Bake for 15-20 minutes, or until cheese is lightly toasted. For an extra treat, sprinkle mozzarella over toasted tomatoes, then place under heated grill for 1-2 minutes, till cheese melts.
