| ||Linguine, Spinach and Rocket w/ Gorgonzola Sauce

1 package linguine
6g plain flour
1 tin evaporated milk
85g crumbled Gorgonzola cheese
Dash of black pepper
125g fresh spinach and rocket
Cook pasta, according
to package directions. While pasta cooks, melt butter in medium saucepan over medium heat. Add flour; cook 1 minute, stirring constantly with a whisk.
Gradually add milk, whisking constantly. Increase heat to medium-high; bring to boil, still whisking. Reduce heat, simmer 3 minutes or until sauce
thickens slightly, stirring frequently. Remove from heat; stir in cheese, salt and pepper. Combine sauce, pasta, and greens, tossing gently to coat.
Yields 4 servings.
