Cherry Tomato Salsa
 As the tastes of summer come to an end, here’s one to savor that sweet, fresh flavour one more time before winter settles upon us.

250-350g cherry tomatoes, quartered
1 red onion, finely chopped
1 hot chile, finely chopped
Juice from 1 lime
10-20g fresh coriander, chopped
sea salt

Toss the cherry tomatoes, red onion, and chile together in a small mixing bowl. Squeeze the lemon juice over the mixture, and stir in the fresh cilantro. Season to taste with salt. Refrigerate for at least 30 minutes prior to serving.
