Classic BLT
 Though the BLT is a common sandwich found in American diners, they were only eaten in our house, while growing up, when the tomatoes were super ripe from the garden and for good reason. Don’t be tempted to use back bacon; crispy fried streaky bacon is the perfect combo with the sweet juicy tomatoes. Simple and delicious!

2-3 slices streaky bacon (per sandwich)
1-2 large ripe tomatoes, red or yellow, sliced
handful of salad greens
thick slices of white bread or your favourite, toasted
spread such as mayo, herby mayo, or butter

Fry the bacon till crisp, drain on kitchen towels. Assemble sandwich with toast w/ spread, greens, tomato and then bacon.
