Gourmet Greek Salad
 Using unusual mixed greens, such as CBF’s summer leaf salad, gives ordinary Greek Salad a bit of a facelift. Add kalamata olives instead of basic black and you’ve got a truly tasty dish!

60ml extra virgin olive oil
5ml red wine vinegar
10ml lemon juice
1 clove garlic, minced
2g dried oregano
salt and pepper to taste
3 ripe medium tomatoes, chopped
1 green bell pepper, sliced
½ of a cucumber, chopped
1 small red onion, chopped
45g sliced kalamata olives or black olives
100g Rocket and Mixed Leaf salad
55g feta cheese, crumbled

Combine first 6 ingredients in a jar, seal and shake well. Allow to stand for 1 hour or prepare the day before and refrigerate. In a large bowl, combine remaining ingredients. Pour dressing over salad and toss. Serve with toasted pita bread.
