Fresh Basil and Parsley Dressing
 Here's one good for rocket and mixed greens or pasta salad. Even try as a quick marinade over chicken or fish.

40ml cider vinegar
1/2 lemon, juice
3 -4 basil leaves, finely chopped
1-2 parsley sprigs, finely chopped
5-7g Dijon mustard or wholegrain
5g honey
Salt and pepper to taste
60ml extra virgin olive oil

Place all ingredients in a glass jar, seal tightly and shake well. Taste and adjust as needed. Will keep in fridge for 2-3 days.
