Rocket, Fennel, and Parmesan Salad
 Rocket and mixed greens will work nicely in this simple salad. Pair with a soup or sandwich and you’ve got a fantastic lunch or light supper.

22ml fresh lemon juice
4g sugar
3ml olive oil
1g salt
0.5g black pepper
1 fennel bulb, thinly sliced
65g red onion, thinly sliced
75g rocket and mixed green salad
30g shaved fresh Parmesan cheese

Combine first 5 ingredients in a small bowl, stirring with a whisk. Combine fennel and onion in a large bowl, drizzle with dressing, tossing gently to coat. Arrange ¼ salad greens on each of 4 plates. Top each serving with a portion of fennel mixture and about 7g cheese. Makes 4 servings.
