 Tahini Soy Vinaigrette
 
 Here’s a dressing with a Middle Eastern taste for green salads and pasta ones alike. Healthy and packed with flavour, it could be used also as a marinade for meats or fish.
 Ingredients:

60g tahini (sesame paste)
60ml olive oil
60ml water
30ml tamari (dark soy sauce) or regular soy sauce
15ml red wine vinegar
15ml lemon juice
2g freshly grated ginger root
1 garlic clove, crushed
black pepper to taste
 
Method:

Combine all ingredients in a food processor or blender, process until smooth. Makes 8 servings (about 250ml).
