Tomato Pie
 Here’s a tasty dish great for taking along to parties or for Sunday brunch. Try different cheeses or add cooked bacon for variations.

1 9-inch pie crust (shortcrust)
7 fresh tomatoes
1 onion
180ml mayonnaise
35g shredded mozzarella
25 g grated parmesan cheese
ground black pepper to taste
2g fresh basil, chopped
4g fresh oregano, chopped

Preheat oven to 175 degrees C. Bake the pastry shell for 8 to 10 minutes or until browned. Slice onion and place in the bottom of pastry shell. Slice tomatoes (removing seeds and as much liquid as possible) and arrange over onions. Add black pepper to taste. In a medium bowl, combine cheeses and mayonnaise. Spread this mixture evenly over tomatoes. Bake for 20-25 minutes or until golden brown. Garnish with fresh herbs.
