 Blue Cheese-Buttermilk Dressing
 
 Here’s a less fattening version of a classic American salad dressing that is fab on lots of different greens.
 Ingredients:

120ml semi-skim buttermilk or soured milk (see description)
120g fat free plain yogurt
45ml white wine vinegar
4g sugar
2 ½ g salt
2 ½ g coarsely ground black pepper
75g thinly sliced green onions
55g crumbled blue cheese or stilton
 
Method:

To make “buttermilk”, add 7ml white vinegar to regular milk and allow to stand for 10 minutes. Then combine first 6 ingredients in a bowl; stir with a whisk until blended. Stir in onions and cheese. Serve over greens. Makes about 355ml of dressing.
