 Spinach and Beans Au Gratin
 
 Here’s a quick, tasty and hearty meal for two that lends itself well to variation.
 Ingredients:

15 ml butter or olive oil
1 medium onion, chopped
3 clove garlic, finely chopped
1 tin black turtle beans, drained
410g chicken or vegetable broth or stock
1 tin whole tomatoes, in tomato juice
2 – 5g fresh chopped basil, or dried
2 – 5g fresh chopped oregano, or dried
2 – 5g fresh chopped rosemary, or dried
pinch cayenne pepper
200-300g fresh spinach, washed and dried
115g mozzarella cheese, shredded
 
Method:

Melt butter in a 10-inch cast iron skillet. Add onion and saute until translucent. Add garlic and saute 1 minute. Add drained beans, broth, tomatoes with juice, and herbs. Cook over medium heat stirring occasionally for 15 minutes. Add spinach gradually as it wilts. Cover with cheese and place skillet under a grill until cheese is bubbly and lightly browned.
