Coriander-Coconut Chutney
 With busy schedules, simplicity is what we want in our meals. If you have a food processor, this chutney comes together quickly. Serve over fish or shellfish and you won’t be sacrificing taste or healthiness with this “fast food.”

25-35g fresh coriander leaves
25g dessicated coconut
60ml water
30ml fresh lime juice
10g minced, seeded hot chile
5g minced peeled fresh ginger
10g curry powder
1/2g salt
1 garlic clove, minced

Place all ingredients in a food processor; process until well blended. If not serving immediately, store in an air tight container in the fridge.
