Creamy Caesar Salad
 Here’s a classic that’s great for almost any salad greens and easily becomes a main meal when chicken or prawns are added. Lovely any time of year, but it’s especially nice as we head into the warmer months.

120g plain yogurt (low fat or fat free, if you’re watching calories)
30ml fresh lemon juice
15ml olive oil
10ml red wine vinegar
10ml Worcestershire sauce
5g anchovy paste
5g Dijon mustard
1g salt
1g freshly ground black pepper
1 garlic clove
Spring salad greens or Butterhead lettuce

Combine all ingredients in a bowl; stir well with a whisk. Cover and chill. Serve over greens. (Yields about 118ml).
