Rice Pilaf with Rocket and Pistachios
 You can add some colour and zest to your next rice side dish with this recipe. Substitute an onion and 2 cloves of garlic for the shallots if you don’t have them on hand.

1 tablespoon olive oil
150g finely chopped shallots (about 5 shallots)
315g uncooked basmati rice (or white rice)
710ml vegetable broth
78ml dry white wine
salt/pepper to taste
75-100g trimmed rocket
30g coarsely chopped pistachios

Heat olive oil in a large saucepan over medium heat. Add shallots, and cook 4 minutes. Stir in rice, and fry 2 minutes. Add broth, wine salt, and pepper, and bring to a boil. Cover, reduce heat, and simmer 20 minutes. Stir in rocket and pistachios. Yields 5 servings.
